Ok… so I’m not even going to act like I’m a great cook because I am NOT! However I do LOVE to eat and even more than that I love to eat hot, super filling, comfort food! On that note I woke up this morning hungry…already thinking about what I wanted for dinner. Welcome to me! I’m always starving! Maybe I need to be wormed??? Something to think about…later…after I eat! 🙂
So onto dinner…I decided that what I needed on this chilly, but not as cold as yesterday, Saturday, was Potatoes and Ham. This is without a doubt one of my FAV dinners. Two reasons for that: 1. It meets my need of hot, filling and comfort. 2. The boys hate it so I actually get some 🙂 3. Did I forget 3? Its a slow cooker recipe and I am the slow cooker Queen! Love, Love, Love my slow cooker! Because I love y’all…I’m gonna share 🙂
Here is the recipe: Country Scalloped Potatoes and Ham
8 Potatoes, thinly sliced
1 onion, chopped
1 lb fully cooked ham, cubed.
1 oz package dry country style gravy mix ( I use peppered)
10 3/4 oz cream of mushroom soup
2 cups water
2 cups shredded cheese
1. Combine Potatoes, onion and ham in lightly greased slow cooker
2. Combine gravy mix, mushroom soup and water. Whisk until combined. Pour over potatoes.
3. Cover. Cook on low 7-9 hours (recommended) or High 3-4 hours. Top with cheese during last 30 minutes of cooking.

and yes, I cubed my potatoes. I go back and forth with slicing and cubing. Honestly, slicing is better, but I was singin’ along with my Hillsong United playlist and randomly just started cubing. It was still yummy-licious!

Sorry guys, but I LOVE me some gravy! I never really ate gravy before moving Southward…yet here I am 🙂 Alright so that sums up my fav dinner! Is it the healthiest? Most likely not with all that ham and gravy, but then again I don’t care because it makes me happy. Enjoy!! (I’m hungry…think I’ll go grab some leftovers) 🙂
